A Day in A Park


A few weeks ago, we took Zeek to the coolest park in Corvallis – it’s one of those awesome wooden castle parks!  And luckily enough for some kids, it’s actually the playground to their school.  (Seriously jealous.  I loved these things as a kid!)

Of course, Zeek isn’t quite old enough to do any of the castle stuff really…but nonetheless we took him around the tire bridge, up and down all the levels, looked at the crazy fun-house mirrors, talked to each other through the tunnel telephone, and pushed him in the baby swing.  Which he loved.  SO much so, that he nearly fell asleep in it. :)

We love the park!  So fun.  Can’t wait to take him back again next summer when he can actually run around and enjoy it!  For now, goodbye summer.  I’m really rather looking forward to fall!!  (Bring on the jeans and sweaters! Whoo!)

I’m a Sucker for Food.

For reals.  Good tasting food.  Good for you food.  (ok ok, and some not so good for you food!). 
I’m sure you remember me complaining about the “diet” Skyler started after one of his nutrition classes last fall at Western Oregon University.  It’s called the Paleo Diet, but really shouldn’t be labeled as a diet.  It’s not just to lose weight.  It’s really just how we should be eating.  It includes lots of meats, veggies, fruits, nuts/seeds (with the exception of peanuts, which is actually a bean and not a nut..weird huh?), eggs.  And NOT eating grains/wheat, beans, rice, dairy and sugar.  And, if you know me at all, you’ll remember that I whined about it.  A LOT.  All the time.  Of course, part of this could have been due to the fact that he sprung this new way of life on me at 7 months pregnant and I really rather liked my milk and macaroni and cheese, dagnabbit.  I was really not what you’d call “adapting” to this new diet, and I threw fits almost every night because I no longer knew what to feed my husband (again, I was very pregnant.  I think this played into it!).  I gave him a steak and a handful of broccoli for a couple weeks straight, because I didn’t know what else I could put on his plate!  It took me a while (months) to accept this change and to actually grow to like it!  I started trying things that I used to hate and suddenly, I liked them.  I felt better eating them.  I actually preferred them.  My favorite snack towards the end of my pregnancy consisted of a big bowl of broccoli and raw almonds: two things that normally you’d have to pay me to eat. 
All of this to say: while I am really liking this new way of eating and we do feel tremendously better than before (not to mention I weighed less than I did pre-pregnancy after only about 6 weeks after Zeek was born), it is still hard to get out of the rut of steaks and broccoli or spinach for dinner.  I’ve been branching out more and trying new things and I’m LOVING it!  Okay, and I will admit that we don’t follow this diet 100%.  Do I still have milk? Uh, heck yes.  Do I still have ice cream and a brownie?  You betchya.  But do I eat way more veggies and meats than I ever did before?  Ohhh, you’d better believe it!  We like to try to follow this diet about 80%.  I do still have a couple glasses of milk a day (but I’ve decreased from my 5-6 glasses!), we still eat some cheese, peanut butter, an occasional sandwich, and we divulge in desserts from time to time. 
Remember, I tried out bacon wrapped sausage jalapeno poppers a couple weeks ago?  Well, as great as those were – they were a little toooo spicy for me.  So I tried out stuffed green peppers tonight!  I am super pleased to say that they were super good, (mostly) good for you, easy and filling!  And Skyler said I could make them any day.  Clearly a winner. :)
Here’s how I made them….
  • Brown 1 lb ground beef
  • Dice 1 red bell pepper and 1/2 of a large onion
  • Throw in red pepper, onion, 2 tbsp crushed garlic, and some black pepper after the meat is browned.  Saute all together for only a few minutes (so onions and peppers are still crunchy).
  • Mix in 1 package (8 oz) of cream cheese and 1/3 cup of parmesan cheese

  • Wash and hollow out your green bell peppers

  • Stuff your peppers full
  • Bake at 350 for about 12 minutes

My {New} Dresser

Our master bedroom is hideous right now.  It's the kind of room that I usually (shamefully) judge people for having.  You know, the kind with a bed (without a headboard) and a dresser and NOTHING ELSE.  No kidding.  Nothing else.  Nothing on the walls.  No nightstands.  Nothing.  I mean, you know, except for the giant pile of laundry on the floor.  I originally had a "buffet" cabinet in our room for a while, but when I started organizing my craft closet (yeah, you read that right!), I decided it should go in there for storage...plus I didn't feel like it really went with the style of room I was going with.  SO, all of the clothes that I had in that buffet table came out.  In a giant pile.  On the floor.  And it hasn't moved for about a month. :)  ANYWAY.  I've been on the lookout for a while for a little dresser or something to put in the bedroom.  And I finally found it.  For $4.99.  Technically, it was $14.99 but I had a free $10 credit there that printed up after my last purchase there a few weeks ago.  So, I scored this sweet little dresser for less than $5 bucks!  

I did what I usually do.  Snatch the price tag off of it (so no one else could snag it, silly!), and then stand back 15 feet and just stare at it for a good 10 minutes.  Envisioning.  

And I decided it was perfect (especially for the price!).

(That's not even a bad fake wood grain...that's just a bad paint job!!)

So I primed it and painted it white.  (What else?!)

Sanded it and added the cute little handles back to it.

And stood back and admired my new dresser!



(Don't mind the sanding dust all over the deck!)
I love the way it turned out.  I'm glad I went with my instinct on this one!  I'll show you how it looks once I get it all settled in our room. :)

Feels good to have one more project crossed off my list!

What a fun week.  We didn't do anything...but Zeek seems like he GREW and got older this week.  It's been so fun to watch the changes.  He is THISCLOSE to crawling and actually going places.  He can push himself backwards pretty good now and can turn in some serious circles.  He also learned how to pull himself up in his little bath tub this week (mama taught him "no, keep your bunnies on the tub!" pretty quick! haha).  He is constantly babbling "dadadada" "babababa" and "mamamama", as well as his "aaaaaaaahhhhhhhhhhh"  "gguuuuaaaaaaarrrrrraaaahhh" talking that he always does!  It cracks me up to hear it.  And when I laugh, he always looks up at me and smiles proudly.  He loooves his voice box. :)

Productive Days = Happiness!

Yesterday I woke up at 5:30 am and quietly crept out of the house to meet some girlfriends (sans baby) for Starbuck's.  We visited until about 7:15 when they had to head out to work and  I drove home to relieve Skyler from "Daddy duty" as he had to leave at 7:30 for his orientation for nursing school (yahoo!).  Zeek woke up to nurse and then...back to sleep.  And slept until almost 11:30 am!  I know this kid loves sleeping, but sometimes he surprises me with exactly how much he loves sleep. :)  We ran a couple errands after he woke up (to Target and Lowes) and after 2 hours he was ready for another nap, which lasted another 2 hours!  All of this led to a very productive day for me!  I LOVE those days when I feel like I can just crank out a bunch of things from my "to-do" list...makes the days that I sit in my pj's until 2 pm feel a little more reasonable... right? 

Are you curious what all I accomplished yesterday by the time Skyler got home?  ME too!  (I love seeing my "to-do" list's diminish!)

Done:
-2 loads of laundry
-dishes
-vacuumed the whole house
-straightened up the living room and kitchen
-sewed 2 bibs, 2 burp cloths and a receiving blanket for a baby shower this weekend
-made up 2 gallon sized bags worth of ice cubed baby food for Zeek (beets and broccoli)
- read a chapter of my current book in my Unread Library - The Proper Care and Feeding of Husbands by Dr. Laura Schlessinger
-primed a bookcase, a dresser, two candlesticks and a "toolbox" with white paint (ready for painting today!)
-pulled weeds
-made sausage jalapeno poppers wrapped in bacon for dinner!

Ok, that doesn't all look like a ton now that I've written it out... but it sure felt like a ton! :)

Skyler loved the jalapeno poppers!  They were really good and quite easy to make too.  I stumbled upon the recipe here and since I had all the ingredients, thought I'd try it out. 


I'll show you the bookcase and dresser when I'm finished!  One step closer to making our {completely blah, bland, nothing in it, nothing on the walls, space that we like to call our} master bedroom done!

 Do you miss seeing Zeek?  I feel weird since I haven't posted much about him since I finished his alphabet a little more than a month ago... I think I may rectify that soon. :)

Have you felt productive recently?  Don't you just love those days?!  Starbuck's days are always productive days for me.  Maybe I should start getting up at 5:30 more often!? ...

.. HAH.  Nevermind.  I'm productive enough when I wake up at 9. :)

Unread Library

It's recently occurred to me (after purchasing about 50 kids and adult books at the Borders store closing sale), that I have a lot of books.  Like a LOT.  And unfortunately, a lot of unread books.  I decided I needed to read my books, because what good is a book just sitting on your bookshelf?  And how many hours do I waste on Facebook, Blogger or web-surfing?  (A LOT)...  So here is my Unread Library.  Will you hold me accountable to reading through my books?  I'll cross them off as I read them. :)

Currently, I'm reading The Proper Care and Feeding of Husbands by Dr Laura Schlessinger. Then I'll start on my list!

Changes...

Looks a little different around here, huh??  Every so often I get the itch to change my blog appearance.  I usually mess with it all for about an hour before deciding, "heck, I kind of just like it how it was before!" ... I'm a fairly simple girl, and the plain Jane, pure white appearance just felt right...

And then... I messed with it beyond the point of return... and I'm actually really glad. :)  I really like the new look.  (Yay for accidents that look like purpose!) 

You'll see more changes in the coming days.  Nothing major.  But definitely some tabs... stay tuned... :)
